Teriyaki Stir Fry

Ingredients
  • 12 oz. Steak, Chicken or Wild Game Meat sliced into ½" strips or chunks
  • 5 Tbsp. Hi-Country Teriyaki Jerky Seasoning, divided
  • 2 Tbsp. Cornstarch
  • 4 Tbsp. Peanut Oil, divided
  • ½ cup Water
  • 1 cup Celery, chunked diagonally
  • ¾ cup Green Pepper, chunked
  • ½ cup Onion, chunked
  • 1 cup Carrots, chunked
  • 1 cup Bean Sprouts
  • 2 cups Cooked Rice
Instructions
  1. Marinade meat strips with 1 Tbsp. of oil and 2 Tbsp. of Teriyaki Jerky Seasoning for 15 minutes or more. Shake and mix 3 Tbsp. of Teriyaki Jerky Seasoning, cornstarch and water, set aside. Stir fry meat until well done in 1 Tbsp. peanut oil, set aside. Stir fry all vegetables, except bean sprouts, in 2 Tbsp. of peanut oil until tender. Add meat, bean sprouts and Teriyaki marinade and stir together until marinade thickens and bean sprouts are tender. Serve over cooked rice and top with chowmein noodles and soy sauce if desired.

  • 1 box Hi-Country Original Recipe Jerky Seasoning
  • 16 lbs. red meat
  • 1-1/4 cups honey
  • 1 cup brown sugar
Instructions
  1. This recipe works best with J. Johnson's Original Recipe flavor. Follow the instructions for making Whole Muscle Jerky or Ground & Formed Jerky and add 1-1/4 cups of honey and 1 cup brown sugar to 16 lbs. of meat after mixing in the spice. Jerky will be slightly sticky after drying.
 

Teriyaki Rub

Use our Sweet Teriyaki Jerky Seasoning as a meat rub.

  • Hi-Country Sweet Teriyaki Jerky Seasoning
  • Steak or Chicken
Instructions
  1. Coat meat with jerky seasoning and refrigerate for 1 hour or more. Cook and enjoy!
 

Bar-B-Que Sauce

Use our Smoky Bar-B-Que Jerky Seasoning as a base for BBQ sauce.

Ingredients
  • 3 cups Ketchup (24 oz. bottle)
  • 2 cups Brown Sugar
  • 4 Tbsp. Hi-Country Bar-B-Que Jerky Seasoning
  • 4 Tbsp. Lemon Juice
  • 2 Tbsp. Dark Molasses
  • 2 Tbsp. Minced Onion
  • 2 Tbsp. Vinegar
  • 2 tsp. Garlic Salt
  • 1 tsp. Salt
  • 1 tsp. Black Pepper
Instructions
  1. Stir all ingredients together until thoroughly blended. Store unused sauce in refrigerator. Recipe makes about 1 quart of sauce.
 

Cajun Blackened Steak

  • Hi-Country Cajun Blend Jerky Seasoning
  • Steak
  • Olive Oil
Instructions
  1. Rinse steak and pat dry with a paper towel. Rub steak with olive oil then coat liberally with Hi-Country Cajun Blend Jerky Seasoning. Coat skillet with oil and heat until oil starts to smoke. The extra hot skillet combined with the seasoning rub gives the steak an extra crispy crust. Place meat in hot skillet and cook to desired doneness. Spice coating should not be totally black - just darkened.
  2. Also great with salmon fillets or chicken!
 

Country Apple Breakfast Sausage

  • Applesauce
  • Hi-Country Country Blend Fresh Sausage Seasonings
  • Meat
Instructions
  1. Add 1 cup applesauce per each 10 pounds of ground meat seasoned with our Country Blend Sausage Spice. A dash of cinnamon will also compliment this recipe. Form into patties and fry. Perfect!
 

Potato Breakfast Sausage

  • 30 lbs. meat (per spice instructions)
  • 5 to 8 lbs. potatoes
  • 1 box Hi-Country Country or German Fresh Sausage Seasonings
Instructions
  1. Peel potatoes and chop into uniform chunks ½" x ½". Boil until tender, drain, and cool. Mix the cooked potatoes and our spice with the course ground meat at the same time. Regrind complete mixture through fine plate. Form into patties and fry.
 

Beer Brats

  • 1 box Bratwurst Dinner Style Sausage Spice Kit
  • 1 can of your favorite beer (or non-alcoholic beer)
  • 30 lbs. meat
Instructions
  1. Follow the enclosed instructions for making bratwurst sausage and simply substitute the water with the beer. Great for grilling!

Apple Brine Mix

  • 12 to 15 lbs. fish or game bird
  • 1 box Hi-Country Fish or Game Bird Brine Mix
  • 1 - 12 oz. can frozen apple juice concentrate
  • water
Instructions
  1. Follow enclosed instructions for making brine mix. Add frozen apple juice concentrate to the mixture and continue with instructions for making this tasty and unique version of smoked fish or game bird.

  • 12 to 15 lbs. game bird
  • 1 box Hi-Country Poultry & Game Bird Brine Mix
  • Water
Instructions
  1. Mix brine with water according to the enclosed instruction booklet. Remove bird from brine and drip dry for 1 hour. Then finish drying with a paper towel (inside and out) to prevent excessive splattering when placed in the hot oil. Follow your deep fryer's manufacturer instructions for cooking poultry or fowl.
