Where are you located?
The Hi-Country manufacturing plant and Trading Post are located in Lincoln, Montana situated along Highway 200, between Great Falls and Missoula and 1 hour from the capital city of Helena. Lincoln is in the beautiful Blackfoot River (A River Runs Through It!) Valley.

Product Questions…

What ingredients make up “spices” and “natural flavor”, “flavor”, or “flavorings”?
Spices and flavorings are used to add flavor to the product. Spices are any aromatic vegetable substances that are intended to function as contributing flavor to food, rather than as a nutritional substance. Spices may be whole or ground. Flavorings are substances that are extracted from a food, and contribute flavor, such as spice extracts. "spices" may include one or more of the following: black pepper, red pepper, white pepper, cayenne pepper, jalapeño pepper, ginger, celery, bay leaves, coriander, thyme, allspice, nutmeg, cloves, anise, marjoram, fennel, oregano, basil, chili pepper, savory, sage, cumin, mustard. "natural flavor", "flavor", or "flavorings" may include one or more of the following: spices (e.g., black pepper, basil, and ginger), spice extracts, essential oils, oleoresins, onion powder, garlic powder, celery powder, onion juice, and garlic juice.  
My spice seasoning was in a hard clump, is it still good?
Yes, it is still good. Try breaking it up with a grater or food processor or microwave for 30 seconds at at time. If you are making sausage you can dissolve the seasoning in the water that the recipe calls for.
How long will my meat spices last?
Unopened, the seasoning will stay fresh 3 to 5 years. Once opened, they will stay fresh 1 to 2 years. We recommend storing your opened spice in an airtight container and keep in a cool, dry place.
My casings smell bad, are they still good?
Usually Yes. When your natural casings first arrive there may be some gas build up in the container, especially in hot weather. This can smell pretty strong. Hog Casings are naturally pungent in odor and is usually NOT a sign of spoilage. Usually all it needs is airing out. Leave the container open in the cooler for a while. Or, take casings out of the container and air them out. If it is really bad, rinse casings in fresh water, re-soak in brine and the smell will usually dissipate. What are the contents and function of the cure packets?
The cure packets contain sodium nitrite and salt. When mixed with meat it prevents most forms of spoilage for a limited amount of time. Sodium Nitrite is a color affixer used to obtain a uniform reddish-pink color in the meat. The cure packet must not be consumed by itself and should be kept out of the reach of children. Store unused cure in an airtight container, out of the reach of children. Dispose of unused cure by rinsing contents down the drain.
How much cure salt do I use?
How to use our curing salt... For curing meat: 1/8 tsp. (1.2g) per pound of meat OR one packet (18g) per 15 pounds of meat * For brine pickle: one packet (18g) per 1 gallon of water will cure 4 to 12 lbs. of fish or fowl * * To be used in conjunction with users recipe that likely includes salt, sugar, and spices.
Is it necessary to add water when making jerky?
No. Our spices for making jerky are a dry cure. Any added moisture will evaporate and lengthen the drying process.
How do I know my jerky is thoroughly dried?
Trial and error perfects the art of jerky making. Tasting jerky while cooking can be misleading. After cooling it can taste raw, burnt or crumbly. Observing the cross section and how it reacts when folded are clues to doneness. When folded, whole muscle jerky should break slightly and not be spongy or rubbery. White muscle fiber should be observed. Thick and thin pieces will vary in doneness.
What is the shelf life of casings?
Natural Hog Casings are shipped and stored unrefrigerated. Store in refrigerator when received and they will last up to 2 years (if package is airtight). Once opened, unused casings can be stored in a brine solution or granulated salt in original resealable pouch. Refrigerate unused casings. Do not freeze. Use within 3 to 4 weeks. Collagen Casings can be stored up to 2 years if unopened. Rehydrate in refrigerator overnight to reconstitute. Once opened, unused casings can be stored up to a year, in resealable pouch and stored in a refrigerator. Fibrous Casings can be stored 2 to 3 years or longer.
How do I store my homemade meat products?
Your homemade jerky may be stored in airtight containers or resealable bags and kept in a cool, dry place for one to two months. If jerky is uncured, then REFRIGERATION IS REQUIRED. For longer storage; wrap, identify, date, and freeze. Your homemade sausage products can be refrigerated up to 4 days. For longer storage; wrap, identify, date, and freeze.
How long will Hi-Country made meat snacks stay fresh after I receive it?
Our meat snacks are dated for 1 year after the date of manufacture. The Best By date is stamped on the bottom of the bags in the seal area or printed on a white label on backside of package. Each sealed bag of product includes an oxygen absorber to help maintain freshness.
How long will my Hi-Country made meat snacks stay fresh after I open it?
For best flavor and enjoyment we recommend consuming our meat snacks within 5 days after opening. Be sure to seal tight or put into an airtight container between snacking to prevent excessive dry out. Refrigeration after opening is only required on products marked as such (i.e. salami and summer sausage). Note: The oxygen absorbers are not for consumption, keep out of reach of children.
I have allergies…are your products produced in a plant that handles wheat, egg, milk, and soy?
Our meat snacks are produced in a facility that is free from egg and milk products. We do utilize soy, wheat and nuts in certain products. Our Wild Game Seasonings, however, are produced in a plant that also handles egg, milk, soy, and wheat products.
Are your products gluten free?
The majority of our meat snacks and wild game seasonings are gluten free. You can view the ingredients and nutritional information for each product by viewing the summary tab in our online store products. Do your products contain Monosodium Glutamate?
Hi-Country does use MSG in some products for a bolder taste. Product ingredients are clearly labeled with their nutritional statements, which can also be viewed online by clicking on the Summary tab. We also understand that some people don't want MSG in their products for health/allergy reasons; which is why we offer a line of MSG free meat snacks and spices.

Do you sell gift certificates?
Gift certificates are a great way to express your kind thoughts when you are not sure what particular product or flavor to give. So why not let them decide? Gift certificates are available online (at the bottom of the shopping cart) or feel free to call us at 1-800-433-3916. Gift Certificates are available for whatever denomination you desire. If placed online, an e-mail will be sent to the recipient with a coupon to redeem on their order placed in our online store. If placed over the phone, a certificate will be mailed to the recipient with a notation of whom it is from. They can then call us to place their order or visit our retail store to redeem.
Is my information confidential?
The personal information you provide to us is kept confidential. This information is used only to fulfill and ship your order. Identifying information is not shared, rented, nor sold. We will keep your name and address on file so that we can send you our mail order brochure to keep you up-to-date on our product lines. In order to ensure your privacy, Hi-Country Snack Foods, Inc. utilizes Authorize.net for credit card approval. Our site can securely transmit your credit card and order information for processing through our secure online payment infrastructure. Hi-Country dislikes SPAM as much as you! Your information will not be sold or shared with 3rd parties of any kind.
Do you have a privacy policy?
Yes. We recognize a fiduciary responsibility with the information that you provide to us and we do not release information without first obtaining your express approval. Please refer to our Privacy Policy for complete details.
What forms of payment do you accept?
For your shopping convenience, we accept VISA, MasterCard, Discover and American Express. You may also send us a check or money order with your order. If you place an order over the phone and intending to sending a check, we will hold the order until the payment is received.
When will my credit card be billed?
Your credit card will be billed the day your order is submitted on our site. If placing your order over the phone your credit card may billed the day your order is taken but most likely will wait until the following day. Your credit card statement will say Hi-Country Snack Foods, Lincoln, MT as the merchant.
Why do I have to log in?
By logging in on My Account, your billing and shipping information will automatically come up the next time you place an online order. This is a convenience we offer our repeat customers. You can also place a reorder.
What do I do if I can’t remember my login or password?
Your login I.D. should be your email address. If you cannot remember your password you can click on the Forgot Your Password? link in the Log In screen and follow the instructions.
Is there a minimum order amount?
No. You can order 1 or more of any item.
Where can I find out the shipping rates and policies?
You can find out shipping specifications and rates by clicking on the Shipping Policy link in the shopping cart area.
What carriers do you ship through?
Orders are shipped via USPS Priority Mail (or UPS upon request). Orders will ship within 2 working days (generally the next business day). Allow 3 to 5 working days for delivery, depending on your location. Shipping charges will be added to your order at checkout. Your order ships directly from Lincoln, Montana.
Do I have to pay sales tax on my order?
Hi-Country is located in Montana and there is NO sales tax here! That's a 5% to 10% savings, so shop happily!
How do I cancel my order?

This is a gift; do you include prices on your packing slip?
No, the packing slip only includes a list of what products are in the package, the address we are shipping to and whom the gift is from. No prices are included in your package's shipment.
This is a gift; do you include a personal message on the packing slip?
Yes, we can add a personal message to the packing slip. The packing slip will list the products that are being sent and then a personal message from you.
Do you ship to APO’s and other military locations?
Yes. We do ship to APO addresses via US Priority Mail. For more information visit our Shipping Policy link.
How can I find the status of my order?
When you place an online order a confirmation email will be sent to you. Once the order has shipped an email will be sent giving you the tracking number for the shipment. You can also email us at customerservice@hicountry.com or call us at 1-800-433-3916 to find the status of your order.
What is the Hi-Country Guarantee?
